Ok, but seriously, folks...
I was excited to leave my helluva-work-day behind and head home tonight for a beer and some tacos tonight. Today we had Chicken and Goat Cheese Tacos with brown rice and black beans on the side (a new favorite side-dish of mine. How did it take me this long to discover pre-cooked rice in a bag?) and a glass of Delirium Tremens. Delirium is super tasty beer, and totally worth the hella-mad dollaz it costs at the liquor store. Seriously, go buy some.

Now that you have a tasty beer to sip on, lets continue.
So yeah, Chicken and Goat Cheese Tacos. I made some baked hard shells with the hard shell baker thingy, too. It works pretty well! Tonight I used corn tortillas. The shells weren't quite as good as the store-bought hard kind, but I'll make them again. I'm sure over the next month I'll have an opportunity or 2 to try out a few different methods. Maybe I'll spray some cooking spray or something to make them crispier. Unless, of course, spraying them makes them softer. Do you guys know what'll happen? Any ideas?
And here it is! The recipe made a kind of a mayo-free chicken salad. It was very tasty in tacos, and I'd make it again for sure, either for tacos or just to have as salad. Goat cheese is good in everything, and this also has a healthy dose of cilantro.
I love Cilantro. If it was legal, I'd totally marry Cilantro. But it'd have to ask me, first. Me asking Cilantro to get married would just seem desperate.

ReplyDeleteI didn't understand most of that last paragraph, but I pushed through it all the way to the end anyhow! And I think the blog should be a "same things 30 times" blog. I will fully participate when you do "30 days of beer" or "30 days of rum drinks."
ReplyDeleteThe first day of taco heaven was...well...pretty heavenly. The hardest part of the day was hearing of so many others getting their taco on much earlier than I could. But, it was the good kind of jealousy.
ReplyDeleteThe goat cheese and chicken tacos were pretty darned tasty. The "homemade" crispy shells were interesting...crispy yet chewy. Not totally my favorite combo for a talk shell, but not off-putting either.
